Having a hard time deciding what to eat for dinner tonight?

Have the price of eggs made it incredibly difficult for you to buy them? Not having eggs in the fridge is something that happens to all of us at some point.

It can be stressful when you find the perfect breaded chicken recipe online, but you don’t have one key thing to make it happen. An egg or two! Ugh, we’ve all been right in your situation. Well, now you can have your mind at ease.

You don’t need eggs at all for this dish. It’ll save you an emergency trip to the grocery store and also help you not spend gas on your vehicle.

This recipe is also designed to use the least amount of seasonings possible, but still will pack a flavor. Since we’re all about budgeting here, not having enough seasonings is something that happens from time to time. We’ve all seen many recipes that claim to be budget friendly but have crazy ingredients you can’t even find at the regular seasoning aisle. You won’t have to worry here.

The seasoning hero in every dish here is Trader Joe’s 21 Seasoning Salute, but you can definitely substitute that for Mrs. Dash or you can make your own delicious seasoning blend featured below in a special section.

Without further ado, here is the recipe!

Lightly-breaded chicken, pan-seared canned potatoes, and mixed vegetables

Lightly-Breaded Air Fried Chicken with Potatoes and Mixed Vegetables

This recipe is one that is simple and no-frills, but is big on flavor. It’s an air fryer dish, but you can certainly cook this on a non-stick pan with your oil of choice (e.g., vegetable or olive oil) and it’ll also be just as delicious and crispy!

What you’ll need is

One pound of chicken breast cut into four tenders

Cooking spray

Flour

Trader Joe’s 21 Seasoning Salute, Mrs. Dash, or your own DIY seasoning blend

Salt and pepper

An air fryer set at 400°F

One can of sliced potatoes

Salt and pepper

Cooking oil (e.g., avocado, olive, or vegetable)

Frozen mixed vegetables

First, what you’ll want to do is preheat or set your air fryer to 400°F.

Then, the next thing you’ll want to do is get your chicken and cut them into four tenders. If your chicken is very thick, you’ll want to pound it with a meat mallet to make sure it’s an even thickness.

Take your flour and all seasonings, combining it all together for dredging your chicken.

Dredge your chicken in the flour mixture, tapping off the excess.

Spray the air fryer basket (or add oil to the pan at this point) and cook the chicken for 10 minutes, flipping them at the halfway point, around 5 minutes.

Next, put one can of sliced potatoes in a medium-sized saucepan and boil according to the directions on the can until the potatoes are tender.

Do not drain the water because the sodium in the water acts as a great way for the potatoes to crisp up in the skillet during the next steps.

Meanwhile, steam a bag of mixed veggies or cook frozen mixed veggies according to package directions. When they are done, season with a little oil and some salt. Add a generous amount of the special seasoning, such as 21 Seasoning Salute.

Next, after your potatoes are done boiling, drain them and season them with Italian seasoning and salt and pepper.

After, you’ll want to put them in a hot pan with a tablespoon of your oil of choice.

These were seared with avocado oil because of the high smoke point. Sear them for three minutes per side.

And now you can bring everything together! Dust everything with a little bit of 21 Seasoning Salute to maximize the magic of the flavors!

No Trader Joe’s nearby? Don’t fret! Here’s an insanely good seasoning blend! You’ll need:

1 tsp of paprika (smoked is amazing for maximum flavor)

1 tsp of garlic powder

1 tsp of onion powder

1 tsp of Italian seasoning

1/2 tsp of oregano

1 tsp of salt

1/2 tsp pepper

Whisk all these ingredients together, and feel free to use a lot for every element in this dish! Remember, this is about you and what you have on hand. If you don’t have any of these on hand, feel free to substitute and remove some things. It’s totally fine. You’ve got this!

This no-frills recipe is not only budget friendly, but is wonderful on flavor and does not require any eggs for the breading

Ingredients

  • 1 lb chicken breast, cut into 4 tenders (pound thin if needed)

  • 1/2 cup all purpose flour

  • 1 tablespoon Trader Joe’s 21 Seasoning Salute (or Mrs. Dash/DIY special seasoning blend)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Cooking spray (or 2 tbsp cooking oil for skillet)

  • For the sides
  • 1 can (15 oz) sliced potatoes

  • 1 bag frozen mixed vegetables

  • 1-2 tbsp high smoke point oil (e.g., avocado or vegetable oil)

  • Additional 21 Seasoning Salute, salt and pepper (to taste)

Directions

  • Preheat or set air fryer to 400°F, or heat a nonstick skillet over medium-high heat
  • Cut chicken breast into four tenders. If the breasts are thick, gently pound a meat mallet for even cooking
  • In a shallow dish, combine flour salt, pepper and seasonings. Dredge the tenders, tapping off any excess flour. These WILL be lightly breaded. If you prefer thicker breading, use a nonstick skillet. It’ll still turn out amazing!
  • While the chicken is cooking in the air fryer or skillet, add the canned potatoes in a medium- sized saucepan. Boil according to the directions on the can. Do not drain before as the salted water helps to crisp up the potatoes on the skillet.
  • Steam or microwave frozen mixed veggies according to package directions (canned is fine if you have only that) and toss with a drizzle of oil, salt, pepper, and a generous sprinkling of the seasoning blend
  • Put one tablespoon or so of high smoke point oil in a skillet over medium-heat. Season the potatoes before putting them in the skillet with Italian seasoning, salt and pepper. Sear for three minutes per side.
  • Put everything together on four plates and serve. Sprinkle 21 Seasoning Salute over every dish to ensure the most flavor out of every dish!
